If this is a 2003 or newer E500, run your hands around the outside perimeter of the cover. There will be little clips that ''flip up''. When you get them all the cover will be loose. You will see the two airfilters under there.
Putting it back is self explanatory. You will get it no problem.

If you mean the engine cover/air box, you only need to disconnect the two air hoses and pull upwards. If this vehicle has the airbox separately from the cover you dont need to disconnect the air hoses and you only have to pull upwards, there are spring loaded clips on the bottom that grab onto small rubber rings to keep the cover down.
